Sun Dried Tomato Chicken Fried Spaghetti

This was so good. The flavors of spicy and sweet burst in your mouth almost immediately and it only gets better from there. Trust me, you’re going to love it.


Cooked chicken (I used leftover rotisserie, but feel free to use whichever one you want) (Feel free to use a meat replacement in this recipe for a vegan version)

1/2 pack of spaghetti Pasta (or any kind really)

1/2 Red Onion

1/4 White Onion

Half large tomato

Mixed Greens

Chili Powder

Season All

Nutritional Yeast

1 packet of Goya Chicken Seasoning

Olive oil

Red Pepper Flakes

Chili Powder


Heat oil in pan and add onions. Let them simmer real good for about 5 minutes on low. They should be fairly translucent (SAT word) by then. Add salt and pepper. Let it cook for 1 more minute. Now add tomato and let it simmer for about 10 minutes on low heat. In the meanwhile, start boiling your pasta. Make sure to add a bit of olive oil to that thang so they don’t stick, na mean? 😂 Now back to the sauce. Hit it with all the seasonings above. Now you know I don’t ever use measurements when I season, I cook from my soul. However, my hand is a bit on the heavier side. I generally count to this and shake vigorously to cover the entire pan when adding spice which equates to about a tablespoon. (Except salt, never do this with salt 🤮). Mix the cooking ingredients and add chicken. (For meat replacement, in a separate pan, fry and season the “meat”. You want it firm and tasting good before adding it to your main pan, I suggest adding the “meat” at the very very end). Drain water from pasta and dump it into the main pan with the sauce. Add a bit more oil and mix until pasta is orange. Add a bit more seasoning directly to pasta/sauce mix and finish of with nutritional yeast. Mix once more and let it cook for about 5 more minutes. Now enjoy!
